Vegetable Monsters

Is it Frankenstein or Dracula? I am not sure, but this vegetable monster was a big hit at the dinner table. I thought my boys (6 and 7) were beyond the age where cutting "undesirable" food into cute shapes would entice them to eat it, but I was wrong - it worked like a charm.

Just cut up carrots, celery, radishes, cucumbers, and  red peppers into sticks, circles and strips and let the kids create. Brocolli and raw baby spinach works great for hair, and olives make perfect eyeballs. Put out a bowl of low-fat dip and watch the magic show of disappearing vegetables.

Scary Snacks

We've been having a great time making these cute Halloween snacks - take a banana, cut it in half, dip it in some OJ and then roll it in unsweetened coconut. Stick two chocolate chips on for the eyes, and you've got yourself one delicious ghost.

Stick a craft stick in the bottom of the "boo-nanner" and eat it or freeze and enjoy frozen.
