Chocolate Chicken

Here's a simple meal that pleases even the most finicky eater. Cocoa spice rubbed chicken, which my kids refer to as "chocolate chicken", Yukon Gold boiled potatoes and steamed green beans.



To make the chicken, first make a dry rub of 1/2 cup Hershey's cocoa powder (unsweetened) and 1/4 cup of salt. Mix together and store in a glass jar with a lid.

Preheat the oven to 400 degrees and rub the outside of the chicken with the cocoa rub. Place in a baking dish and bake for 1 1/2 hours to 1 3/4 hours depending on size of the bird (15-20 minutes per pound).

Let the chicken rest for 5 to 10 minutes before carving.
