
To make the chicken, first make a dry rub of 1/2 cup Hershey's cocoa powder (unsweetened) and 1/4 cup of salt. Mix together and store in a glass jar with a lid.
Preheat the oven to 400 degrees and rub the outside of the chicken with the cocoa rub. Place in a baking dish and bake for 1 1/2 hours to 1 3/4 hours depending on size of the bird (15-20 minutes per pound).
Let the chicken rest for 5 to 10 minutes before carving.
